Refreshing Summer Citrus Chicken Salad with Mint Lemonade
A vibrant and light summer meal pairing a zesty citrus chicken salad with a cool, mint-infused lemonade. Perfect for warm days, this meal combines fresh seasonal ingredients and refreshing flavors, ideal for a quick lunch or casual dinner.
Ingredients
4 pieces boneless skinless chicken breasts (trimmed)
2 tablespoons olive oil (divided)
1 teaspoon salt (divided)
0.5 teaspoon black pepper (divided)
6 cups mixed salad greens (washed and dried)
1 medium grapefruit (peeled and segmented)
1 medium navel orange (peeled and segmented)
1 medium cucumber (thinly sliced)
0.25 cup red onion (thinly sliced)
0.5 cup feta cheese (crumbled)
1 cup fresh mint leaves (chopped, divided)
0.25 cup lemon juice (freshly squeezed)
2 tablespoons honey (for lemonade)
4 cups cold water (for lemonade)
1 cup ice cubes (for serving)
Instructions
Preheat a grill pan or outdoor grill to medium-high heat (about 190°C / 375°F). Brush chicken breasts with 1 tablespoon olive oil and season evenly with 0.5 teaspoon salt and 0.25 teaspoon black pepper.
Grill chicken breasts for about 6-7 minutes per side until cooked through and internal temperature reaches 74°C / 165°F. Remove from grill and let rest for 5 minutes before slicing thinly.
In a large salad bowl, combine mixed greens, grapefruit segments, orange segments, cucumber slices, red onion, and half of the chopped mint leaves. Toss gently.
Add sliced grilled chicken on top of the salad and sprinkle crumbled feta cheese and remaining mint leaves over it. Drizzle with remaining 1 tablespoon olive oil and season with remaining salt and pepper to taste.
For the mint lemonade, in a pitcher, combine lemon juice, honey, chopped mint leaves, and cold water. Stir until honey dissolves completely. Refrigerate for at least 10 minutes to allow flavors to meld.
Serve the salad chilled or at room temperature alongside glasses of mint lemonade poured over ice cubes. Garnish drinks with additional mint leaves if desired.
Equipment
grill pan or outdoor grill
meat thermometer
large salad bowl
sharp knife
cutting board
pitcher
salad tongs
Tips
I find that letting the grilled chicken rest before slicing keeps it juicy and tender.
For a sweeter lemonade, adjust honey quantity to taste or substitute with agave syrup for a vegan option.
Using fresh seasonal citrus fruits adds natural brightness and sweetness without extra sugar.
Substitutions
Substitute chicken breasts with skinless turkey cutlets or firm tofu for a vegetarian option.
Use goat cheese instead of feta for a creamier texture.
Replace honey with maple syrup or simple syrup for different sweetener preferences.
Storage Instructions
Store leftover salad and lemonade separately in airtight containers in the refrigerator for up to 2 days. Keep salad dressing separate if possible to prevent sogginess.

How This Recipe Differs and What to Try Next
This recipe focuses on grilling chicken breasts at 190°C to create a sear and grill marks that add texture and flavor. Cooking chicken to an internal temperature of 74°C ensures it is safe and juicy. The grilling method provides a subtle smokiness and crisp exterior that other cooking methods in this recipe do not achieve.
- Slow Cooker Creamy White Chicken Chili — offers a different texture and warming flavors using slow-cooked chicken
- One-Pan Lemon Herb Salmon with Roasted Asparagus — another citrus-flavored dish that is quick and easy
Using a meat thermometer is important to confirm the chicken reaches 74°C internally for safety and quality.
