I’m Ayesha Muddusar, a head chef based in Lahore, Pakistan. I spent over five years working professional kitchens — running the line, building menus, and being the one responsible for what actually left the pass — before starting this site.

What I never settled into was one cuisine. Every time I found a dish from somewhere I hadn’t cooked before — a regional stew, a bread, a way of building a sauce — I wanted to make it myself and understand why it worked. That habit turned into most of what I do now: cooking and baking my way through cuisines from around the world, one country at a time, and writing down what I actually learn from getting it right (and from getting it wrong first).

This site is where that shows up. Every recipe here has been through a real kitchen process — tested, adjusted, and written the way I’d explain it to someone standing next to me at the stove, not the way it sounds in a cookbook. When a recipe calls for a specific temperature or technique, it’s because I’ve hit the alternative and had to fix it.
